••Grind the oats into a very fine powder in a small chopper or food processor.
Mash 3/4 of the bananas in a large bowl until completely smooth. This will be the base for your batter.
Beat the eggs in a separate bowl and add them to the mashed banana. Also mix in 2/3 of the Greek yogurt, the finely ground oats, baking powder, cinnamon powder, and a pinch of salt. Stir everything together well until you have a smooth batter.
Preheat the waffle iron to medium heat and grease it with half of the olive oil so the waffles won’t stick later.
Fill the waffle iron with half of the batter. Close the appliance and bake the waffle for about 6 minutes until lightly browned and cooked through. Repeat this with the remaining olive oil and the rest of the batter for a second batch of waffles.
While the waffles are baking, heat the blueberries in a saucepan over low heat for about 5 minutes, until they are soft. This makes the berries extra delicious.
Slice the remaining banana for a fresh topping.
Cut the waffles diagonally in half and top each waffle with the warm blueberries, banana slices, and the remaining Greek yogurt. Enjoy!
