•••Squeeze the meat out of the merguez and fry it in a little olive oil. Once it is nicely browned, remove it from the pan and set aside.
Finely chop the onion and garlic. Add them to the pan with the remaining oil from the merguez and sauté until soft.
Cut the yellow and red bell peppers into cubes and add them to the onion and garlic. Mix well.
Stir in the tomato paste and add the cumin, paprika powder, cayenne pepper, and dried oregano. Mix well so the spices are evenly distributed.
Pour in the water and crumble the vegetable stock cube over the sauce. Stir everything well.
Rinse the corn and red kidney beans under cold water. Add them to the sauce along with the diced tomatoes, the fried merguez, and a bouquet garni of thyme, bay leaf, and rosemary.
Bring the sauce to a good boil. Taste and season with salt and pepper.
Reduce the heat and carefully crack an egg into a small cup. Gently slide the egg into the tomato sauce. Cover the pan and let the eggs poach until cooked to your liking.
Preheat the oven to 350°F. Toast the pita breads until lightly crisp.
Finely chop the green jalapeño and pick the fresh cilantro leaves.
Finish the shakshuka with a spoonful of sour cream and sprinkle with the chopped jalapeño and cilantro.
