•••Peel and finely chop the onion, crush the garlic, peel and dice the carrots and celery into small cubes, and slice the zucchini and potatoes into thin rounds. Keep the potatoes in cold water so they do not discolor.
Slice the eggplant into thin rounds and sprinkle with salt. Let sit for 15–20 minutes to draw out moisture.
Heat olive oil in a pan and sauté the onion and garlic until translucent. Add the carrots and celery and cook briefly.
Heat olive oil in a pan over high heat and cook the pork and beef mince.
Add the cooked pork and beef mince to the sautéed vegetables and add the tomato paste and harissa. Mix well and pour in the red wine and passata. Season with cumin, dried oregano, salt, and pepper, add a splash of water, and let simmer gently for half an hour until the flavors meld.

On top of that, add a second layer of meat ragout.
Repeat until the dish is filled, ending with a layer of potatoes and the remaining béchamel sauce.
Grate a generous layer of sheep’s cheese over the casserole.
