•••Season the chicken breast with pepper, salt, and chicken seasoning. Finely chop the onion and mince the garlic. Cut the sun-dried tomatoes into pieces and roughly chop the fresh basil.
Heat a splash of olive oil in a pan over medium heat and fry the chicken breast until golden brown and cooked through. Remove the chicken from the pan and keep warm.
Set the heat to medium and use the remaining cooking fat to briefly fry the onion and garlic until the onion is translucent.
Add the cream to the pan. Stir the tomato paste into the cream and cook briefly, then add the chicken stock with a little water and bring to a boil. Let it gently simmer until the sauce has thickened.
