••Peel the onion and garlic and finely chop them. Grate the carrots and cut them into cubes. Remove the seeds from the bell pepper and finely chop it.
Heat a generous splash of olive oil in an ovenproof pot with a lid. Sauté the onion and garlic with thyme and cinnamon for a few minutes until fragrant.
Add the ground chicken and cook until crumbly. If needed, break it up a bit more with a masher. Stir in the carrot and bell pepper and let them gently stew, covered, for about 10 minutes.
Add the diced tomatoes, tomato paste, cream cheese, cornstarch, and water and mix well. Place the lasagna sheets one by one into the tomato sauce so they are completely covered. Let simmer gently over medium-low to low heat, with the lid on, until the sheets are soft (about 25 minutes).
If the sauce is too thin, add extra cornstarch to thicken it. Spoon the remaining cream cheese over the top for extra creaminess and serve.
