••Preheat the oven to 392 °F and bring water to a boil for the pasta.
Finely chop the onion and garlic, and slice the leek into rings.
Cook the elbow pasta in the boiling water until al dente, reserving some cooking water and draining the rest.
Sauté* the onion and garlic until translucent, add the leek and cook until soft, then add the ham cubes and cook briefly. Add a splash of water and season with salt, pepper, and thyme. Cover and let it simmer for a moment.
Melt butter in another pan, add the flour and cook briefly. Gradually whisk in the milk and bring gently to a boil until the sauce thickens.
Remove the sauce from the heat and stir in the grated Emmental cheese so it melts. Season with ground nutmeg, mustard, lemon juice, salt, and pepper.
Mix the elbow pasta with a splash of the cooking water, the braised vegetables, ham cubes, and the cheese sauce until evenly combined.
Spoon the mixture into a greased baking dish, sprinkle with extra grated Emmental cheese, place under the grill, and gratinate until the top is golden brown and crispy. Serve warm. Enjoy!
