•••Preheat the oven to 320 °F.
Prepare the chicken by cutting the chicken legs into pieces. Then rub them with a drizzle of olive oil, chicken seasoning, cumin, ras el hanout, smoked paprika powder, and harissa.
Heat a drizzle of olive oil in a large roasting pan or casserole dish and brown the chicken on all sides until golden brown. Remove the chicken from the pan and set aside.
Pour off the used oil and heat a new drizzle of olive oil in the same pan.
Roughly chop the onions, finely chop the garlic and ginger, and cut the celery into large pieces. Gently sauté the onion, garlic, ginger, and celery in the pan.
Peel and cut the carrots into large pieces and add them to the pan. Fry briefly.
Add the cumin, ras el hanout, smoked paprika powder, turmeric, and harissa and fry briefly so the flavors are released.
Stir in the tomato paste and cook for 1 minute.
Return the browned chicken to the pan.
Deglaze with white wine and add the diced tomatoes, chicken stock, chickpeas, and the bouquet garni of bay leaf and thyme.
