•••Heat a drizzle of olive oil in a large pan over medium heat.
Finely chop the onion and cut the red bell pepper into cubes. Add them to the pan and cook gently until soft and translucent.
Cut the chicken breast into pieces and finely chop the garlic. Add both to the pan and cook until the chicken begins to brown.
Season the mixture with salt, pepper, paprika powder, cayenne pepper, cumin powder, and dried basil. Stir well and cook for a few minutes so the flavors can develop.
Add the passata and the hot water. Crumble the chicken stock cube over the pan and mix everything well.
Rinse the rice until the water runs clear, then add the rice and peas. Stir so everything is evenly distributed.
Reduce the heat to low, cover the pan, and let it simmer gently. Stir occasionally so the rice does not burn. Cook for about 14–17 minutes until the rice is done and most of the liquid has been absorbed.
