•••Preheat the oven to 400°F.
Cut the chicken thigh fillets into large pieces and mix in a bowl with 2 tablespoons of sauce of your choice (curry sauce), a pinch of salt and pepper.
Cut the potatoes in half and parboil them for 5 minutes in boiling water; drain.
Cut the bell peppers into strips and the onion into half rings.
Place the parboiled potatoes, bell peppers, and onion on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with thyme, paprika powder, pepper, and salt. Mix everything together well.
Divide the pieces of chicken over the tray bake and brush the chicken with some extra sauce if desired for a sticky coating.
Bake the tray bake in the middle of the oven for about 25–30 minutes, until golden brown and cooked through. Toss once halfway through.
